Makes 2 Servings
- 4slices whole-wheat bread, cubed
- 4 large eggs, beaten
- 2 medium beefsteak tomatoes, sliced
- 1/4cup fresh basil, torn
- 2ounces fresh mozzarella, sliced thin
Heat oven to 375 degrees and coat a small, oven-safe skillet with cooking spray.
In a bowl, combine bread and eggs. Gently stir until bread soaks up egg. Add tomatoes and basil, season with salt and pepper, toss to coat, and transfer to skillet, pressing top to make an even layer. Bake 15 minutes.
Top evenly with cheese and bake 5 to 7 minutes more, until cheese is melted and strata is cooked through.
