Makes 1 Serving
- 2teaspoons olive oil
- 1 scallion, sliced thin
- 3cloves garlic, finely chopped
- 2tablespoons parsley, finely chopped
- 1cup loosely packed baby spinach
- 2tablespoons nutritional yeast flakes
- 1cup cooked millet
- 2ounces cheddar, grated
Heat broiler on high. In a small oven-safe skillet over medium heat, heat olive oil. Add scallions and garlic. Cook, stirring occasionally, until scallions are soft and garlic is fragrant, about 2 minutes.
Add parsley and spinach. Season with salt and pepper. Cook, stirring, until spinach is wilted, about 1 minute.
Add yeast and cook, stirring, until flakes start to dissolve, about 1 minute.
Add millet and cook, stirring, until heated through. Spread mixture evenly in skillet, then top with cheddar.
Broil until cheese is melted and starting to brown slightly, about 3 minutes.
