Cheesy Green Millet Skillet

Makes 1 Serving

Ingredients
  • 2teaspoons olive oil
  • 1 scallion, sliced thin
  • 3cloves garlic, finely chopped
  • 2tablespoons parsley, finely chopped
  • 1cup loosely packed baby spinach
  • Salt
  • Pepper
  • 2tablespoons nutritional yeast flakes
  • 1cup cooked millet
  • 2ounces cheddar, grated
Directions
  1. Heat broiler on high. In a small oven-safe skillet over medium heat, heat olive oil. Add scallions and garlic. Cook, stirring occasionally, until scallions are soft and garlic is fragrant, about 2 minutes.

  2. Add parsley and spinach. Season with salt and pepper. Cook, stirring, until spinach is wilted, about 1 minute.

  3. Add yeast and cook, stirring, until flakes start to dissolve, about 1 minute.

  4. Add millet and cook, stirring, until heated through. Spread mixture evenly in skillet, then top with cheddar.

  5. Broil until cheese is melted and starting to brown slightly, about 3 minutes.
