Hummus Chicken Salad Sandwich

Makes 1 Serving

  • 1 boneless, skinless chicken thigh (about 3 oz)
  • Salt
  • Pepper
  • 2teaspoons olive oil, divided
  • 3tablespoons hummus
  • 1teaspoon apple cider vinegar
  • 1teaspoon fresh parsley, chopped
  • 1/8teaspoon paprika
  • 1/4cup grapes, halved
  • 2slices 100% whole-wheat bread
  1. Season chicken thigh with salt and pepper on all sides. In a small skillet over medium heat, heat 1 tsp olive oil. Add chicken and cook until cooked through, about 5 minutes per side. Cool slightly on a cutting board, then cut into rough 1-inch pieces.

  2. In a bowl, stir together hummus, vinegar, remaining 1 tsp olive oil, parsley, and paprika. Season with salt and pepper. Add grapes and chicken; toss to coat.
