Pineapple Cheesecake Overnight Oats

Makes 2 Servings

Ingredients
  • 1cup lowfat cottage cheese
  • 1 1/2cups fresh (or frozen, thawed) pineapple chunks
  • 3/4cup rolled oats
  • 2tablespoons chia seeds
  • 30 almonds, chopped
Directions
  1. In a food processor, puree cottage cheese and pineapple until smooth.

  2. In a bowl, stir together pineapple–cottage cheese mixture, rolled oats, and chia seeds.

  3. Refrigerate at least 6 hours.

  4. Serve cold, sprinkled with almonds.

  5. Store leftover serving in the fridge.
