Scallion Millet With Soft-Boiled Egg

Makes 1 Serving

  • 2 large eggs
  • 1teaspoon olive oil
  • 2 scallions, sliced, white and green parts separated
  • 3/4cup cooked millet
  • 1/4cup 2 percent milk
  • 1pinch paprika
  • Salt
  • Pepper
  1. Fill a medium lidded saucepan with 5 inches water and bring to a boil. Carefully add eggs, one at a time, then reduce heat to low, cover, and cook 7 minutes.

  2. In a small pot over medium heat, heat oil. Add scallion whites, season with salt and pepper, and cook, stirring occasionally, until slightly soft, about 3 minutes. Add millet, milk, paprika and 1 tbsp water. Cook, stirring, until warm and millet has absorbed milk, about 2 minutes. Stir in scallion greens.

  3. Carefully remove eggs from water, run under cold water, and peel.

  4. Top millet with soft-boiled eggs.
