Smashed Black Bean, Tomato, and Avocado Sandwich

Makes 1 Serving

Ingredients
  • 1/2cup canned black beans, rinsed and drained
  • 1/2 lime, juiced, divided
  • Salt
  • Pepper
  • 2slices 100% whole-wheat bread, lightly toasted
  • 1 medium beefsteak tomato, sliced thin
  • 1ounce cheddar, sliced thin
  • 1/4 medium-size ripe avocado, sliced thin
Directions
  1. In a bowl, mash beans with juice of 1/4 lime and salt and pepper. Spread over 1 slice bread. Top with tomato and cheddar. Lay avocado slices on second brice slice and drizzle with remaining lime juice. Mash avocado with a fork. Sandwich slices together.
