One of only 64 Forbes Five Star restaurants in the world, Herons in Cary, North Carolina, is the signature restaurant of The Umstead Hotel and Spa. Led by Executive Chef Steven Greene, Herons offers dynamic, decadent, and refined American cuisine inspired by the rich natural beauty of its region. Currently, they are serving a modified menu and simplified service levels until further notice. Three and four-course dinners, as well as tasting menus, are not available at this time. Pastry Chef Jonathan Fisher recently joined the team and is a vet of the famed French Laundry in Napa. Menu highlights include tuna with Iberico, satsuma, egg white caviar, winter roots, onion consommé and beef with black garlic, parsnip, chestnut polenta, and Brussels sprouts.
